Peter Line’s Turkey Dog and Pork Rillette



-pulled pork*
-turkey dogs
-cornichon pickles

*for the pulled pork, dice a pork shoulder and brown it in a heavy pot. Add half an onion with 2 cloves inserted, some rosemary and thyme, salt, pepper and water to cover. Simmer for several hours until pork is falling apart. Remove onion and strain pork, shred with fork.

-Mash turkey dogs and add even amount of pork. Add to bowl and refrigerate.
-Slice baguette and toast.
-Serve with baguette crostinis and cornichons.
